Galvin Bistrot & Bar (formerly Galvin HOP) is inspired by the Galvin brothers’ passion for French cuisine and bars à vins. Created by Chris and Jeff Galvin, the menu at this stylish Spital Square spot is packed with carefully sourced ingredients and champions great provenance. Modern dishes are created using a wood-fired oven and open grills, whilst the charcuterie counter serves artisanal cured meat with farmhouse cheeses. Brewery-fresh Czech pilsner is housed in copper tanks above the bar, whilst delicious cocktails are served alongside a cutting-edge wine system serving boutique and delicious wines on tap as well as a selection of wines by the bottle.
